Chocolate Chia Pudding

Honestly, I never thought I would complain about being told to eat doughnuts. The cakey, sugary, chocolate glaze pastries almost made getting blood taken for tests worth it; almost. The consequences that followed were far less agreeable. For the 8 hours after consuming said doughnuts, I was: exhausted, irritable, weak, and bloated. I promise, that combination makes for a terrible mother and wife. (Sorry family).
I needed an energizing, long-lasting, food to push me on catching up on all of the work that was slacked on yesterday. I go one day without being Mrs. Amazing Housewife, and it looks like WW3 broke out here....thank you Toddler. I won't call chia seeds a superfood, because I hate that word about as much as I hate my knees being touched (am I the only one who feels this way?). If there is any word that is more euphonious which equates to superfood, please share, because that's exactly what they are. Chia seeds are high in fiber, calcium, iron, and packed with Omega-3 fatty acids. Before the word fatty scares you away, read this and be enlightened! So much chocolate, so many berries, so much goodness.

Side note: If any of you have tips on care for a Meyer's Lemon Tree, please help a lady out. I seem to kill every plant I glance at.

Chocolate Chia Pudding
-2 tbsp cocoa powder
-3/4 cup of milk of your choosing (almond, for me)
-1/2 tbsp of your preferred sweetener (I used pure maple syrup)
-4 tbsp chia seeds
-dash of vanilla extract
Combine all of the listed ingredients and let it set in the fridge for at least an hour. The cocoa powder doesn't mix very well with cold milk, so I blended mine before I added the chia seeds.

Top/layer with your favorite fruits or nuts, or just eat it plain!
Mine was layered with: pudding, chopped, salted almonds, blueberries, strawberries, and a dark chocolate, coconut drizzle. Do I feel guilty for eating chocolate at 7am? Not even in the slightest.
